Extraction:  Steam distillation from rhizomes.

Note:  Possible skin irritant.  Use in moderation. Not suitable for infants.

Comments: 

Ginger has been used as a spice for more than 25 centuries, and is quite unique in that it is a root spice, where as most other spices are grown above ground. Ginger is an important crop for a number of countries and its economic importance is reflected in the fact that it is currently the tenth most important spice in world terms. World production of dry ginger root runs in excess of 100 tonne per annum.
